The sweetness of the fruit balances perfectly with the bitterness of the coffee. Traditionally, spoon sweets were offered to guests as a symbol of hospitality. We have taken the concept of the spoon sweet and explored the best use of the depth of flavour generated by the fruit and the slow cooking process.
